                              Recipes for Baking With Kefir 

                           Kefir and Fresh Fruit Smoothies 

Easy to make and fun to drink. Cool, smooth, and delicious, as well as nutritious.  All you will need is a blender, some ice, honey or sugar, one or more of your favorite fresh or frozen fruits, and Kefir.

Step 1: Chip or crush 1/2 cup of ice in a blender.

Step 2: Add your fruit, 2 cups of Kefir, and sweetenerr to taste.

Step 3: Blend to desired consistancy  on high. (Be sure the lid is on!)

Step 4: Pour into glasses and enjoy.

                                 Kefir-Elderberry Muffins 

                                Ingredients 

1 cup whole wheat flour.

3 cups  all purpose flour.

2 cups of sugar.

1tps baking  soda and 1 tps baking powder.

1 tps salt. 

1/2 cup melted butter .

1 cup Kefir (if more liquid is desired add additional goat's milk to desired concistency)

1TBS vanilla

2 farm fresh eggs.

1 cup freshly picked elderberries. 

Mix dry ingredient well then add liquid ingredients. After the batter is mixed well add the elderberries. Grease muffin tins and fill with the batter. Place in preheated oven at 350 degrees. Bake for 20 minutes. Serve with butter and enjoy for a satisfying and healthy breakfast or snack. Makes two and a half dozen muffins.

                                                   Cheesy-Tomato Kefir Muffins

                               Ingredients:

4 cups all pupose flour

2 cups whole wheat flour

1/2 cup sugar

1 tps each of baking powder and soda

pinch of salt

1/2 cup bacon bits

1/2 cup grated Parmesan cheese

1 cup grated cheddar cheese 

1 egg

6-8 small tomatos finely chopped

1 cup Kefir

2 cups goat's milk

1/2 cup of melted butter or margarine 

Bake in a preheated oven, at 350 degrees for 20 minutes. Serve hot with butter. Makes two to three dozen muffins. 

                                   Kefir-Zucchini Bread 

                                Ingredients 

2 cups all purpose flour

1 cup whole wheat flour

1/2 cup brown sugar

1/2 cup sugar

1tps salt

1tps baking soda and 1tps baking powder

cinnamon, ground cloves, ginger, anise, and nutmeg seasoned to taste.

 

One medium garden fresh zucchini  washed and grated

2 eggs

1/2 cup melted butter

1 cup of goat milk Kefir ( if you need more moisture, slowly add goat milk to the desired

1Tbs Vanilla extract

  Mix dry ingredients. Add the grated zucchini. Mix thoroughly. Now add your moist ingredients. Stir well and pour into greased bread pans. Bake in a preheated oven at 350 degrees F for 30 minutes. Serve with cream cheese or butter.  Makes two bread pans worth of bread.

                                         Kefir Waffles 

                                Ingredients 

3 cups of all purpose flour

1 cup of sugar

pinch of salt

1 tps each of baking soda and powder 

1/2 cup Kefir

1 cup of fresh goat's milk

1 farm fresh egg

1/4 cup melted butter

1tps vanilla extract

  Measure and mix together all the dry ingredients in a mixing bowl. Next add your moist ingreients and mix thoroughly. Bake in an electric waffle iron until tender and golden. Serve with butter and maple syrup, bacon, sausage, or "mock srapple." 

                              Wild Blackberry Griddle Cakes

                              Ingredients: 

4 cup all purpose flour

1 cup whole wheat flour

1 cup sugar

1 tps each of baking powder and soda

a pinch of salt

a touch of nutmeg or ground mace

 

 

1 cup of fresh or frozen wild black berries

1/2 cup melted butter or margerine

2 eggs

1 Tbs vanilla extract

1 cup Kefir

1 1/2 to 2 cups of goat's milk

 

Bake on a medium hot no stick griddle until golden and tender. Serve hot with butter and syrup, with bacon, sausage, or fresh fruit on the side. 

                              Kefir- Baking Soda Biscuits 

                               Ingredients: 

6 cups of all purpose flour

1 cup of sugar

2 sticks of butter or margarine 

1 tps each of baking soda and powder

1 tps of salt

2 cups of Kefir 

   Measure the flour, sugar, salt, and baking soda and powder in to a large mixing bowl.  Use a pastry knife and cut the butter  or margarine into the six cups of flour. When he mixture has the consistency of coarse meal add the Kefir and mix the dough until soft and pliable. You may have to add some extra flour. Need the dough and then role it out on a floured surface to about 1/4 inch thick. Cut out the biscuits with a clean glass.  Place on a baking sheet and bake in a preheated oven at 350 degrees for 22 to 25 minutes until golden brown. Serve with butter and home made jam or with goat milk and sausage gravy. 

                          Kefir Apple-Cinnamon Coffee Cake 

                               Ingredients: 

3 cups of all purpose flour

1 1/2 cup sugar

1 tps of both baking soda and powder

ground nutmeg to taste 

1/2cup melted butter or margarine

1 TBs vanilla

1 egg

1 cup of Kefir

pinch of salt

Topping Ingredients:

1 cup quick oats

1/2 cup of brown sugar (packed)

1/2 cup of melted butter or margarine

ground cinnamon to taste

two to three baking type apples washed, cut and skins removed

  In a large mixing bowl mix together thoroughly the flour, sugar, salt, baking soda and powder, and nutmeg. Next add the melted butter, vanilla, and Kefir. Stir and pour into a 9 X 12 inch baking dish.

  Next mix together in a mixing bowl the brown sugar, quick oats, cinnamon, and melted butter. Toss until blended evenly. Now mix in your apple slices. Cover the top of the cake evenly with this mixture and bake in a preheated oven at 350 degrees for 35 minutes. Serve hot with fresh brewed coffee and butter.
